What makes a sharp knife?

The same force divided by less surface area (such as a thinner, sharper knife) equals more force focused on a small area. If the force exerted by the blade's edge is greater than the strength of the material you are cutting...the material is cut. Sharp knives need less force to cut than dull knives.

What is one very simple way to test if your knife is sharp enough or if it needs to be sharpened?

Gently run your fingertips over the edge of the blade. Sharp knives simply feel sharp, with a blade that has a well-defined, distinct edge. On the other hand, if the blade feels dull or rounded, you're knife will benefit from being sharpened.

Obsidian knife blades: overkill for slicing your sandwich. The thinnest blades are three nanometres wide at the edge – 10 times sharper than a razor blade. These are made by flaking a long, thin sliver from a core of obsidian (volcanic glass).

How do you measure sharpness?

Rise Distance and Frequency Domain. Image sharpness can be measured by the “rise distance” of an edge within the image. With this technique, sharpness can be determined by the distance of a pixel level between 10% to 90% of its final value (also called 10-90% rise distance; see Figure 3).

How often do knives need to be sharpened?

Do I need to sharpen and how often? Your knives should only need to be sharpened every few months depending on how often they are used – I would also recommend having your knives professionally sharpened every 1-2 years.

Why does my knife get dull so fast?

The steel the knife is made from is far harder than anything you would normally cut; therefore the dulling effect on the cutting edge of the knife is very low. The harder the material a knife comes in contact with the faster it will dull. Avoiding contact with hard materials is the key to preventing premature dulling.

Is there a scale for sharpness?

There are actually three different scientific scales for sharpness, invented by boffins. These are called “Edge Apex Thickness”, “Brubacher Edge Sharpness Scale” and “Razor Edge Sharpness Tester”. Proper knife nerds have semi-official sharpness levels such as “nuts sharp” and “scary sharp” and “crazy sharp”.

How sharp should a pocket knife be?

For a pocket knife, shoot for a 10 to 15 degree angle. This will give you an edge that's sharp enough for most daily needs, but not sharp enough to perform heart surgery. Keeping a constant angle by hand takes a lot of practice. If you're having difficulty, you might consider investing in a sharpening guide.

How does a sharpness tester work?

The PT50 Series of Edge-On-Up Sharpness Testers give the ability to measure and quantify the level of sharpness of any given edge. They work by measuring the force in grams required to cut through a standardized, calibrated medium. The result is a number that can be used to compare the relative sharpness of edges.
